Belgian Beef Casserole

Listen up, ladies.  If you want to grab the heart of that certain man you’ve had your eye on now for a while, this is the way to do it.  Beer and beef.  What more could you possibly need???  I’d serve this over buttered egg noodles or even plain white rice if you’d like.  I think it sounds quite delicious.  Change it up by using different beers… Guinness will give an entirely different flavor than an IPA or a Belgian Wheat.  Lots of possibilities.

Belgian Beef Casserole

2 lbs. stewing beef cut into bite size pieces

12 small white onions

1 can regular corn, drained

1 teaspoon dried rosemary

1 cup beer

1 small jar unstuffed Spanish green olives

1 stick margarine or butter

Salt, pepper and flour

Melt margarine or butter in fry pan and cook peeled white onions for a few minutes in it.  Flour, salt and pepper beef and brown in butter.  Transfer beef to casserole, add rosemary, slice onion generously over top, add more fresh pepper, and pour beer over contents.  cover casserole and place in 350F oven for one hour.  Remove from oven at the end of this period and add olives, cover and replace in oven for 1/2 hour or more until beef is tender.
