Cocoanut Pudding

This is a recipe that I am surprised is still complete.  The piece of paper is torn in two.  Luckily, it was kept together in the cook book so we can enjoy it today.  The person who saved this recipe spelled it as Cocoanut… it could be that this is how they used to spell coconut.  Life was a bitch without spellcheck!

Cocoanut Pudding

½ cup cocoanut

½ cup bread crumbs

1 pint milk

1 egg

1 T. butter

2 T. sugar

½ tsp. salt

Bake ½ hour.

There are no other directions to this recipe.  So I would do as follows:  Preheat oven to 325F.  Melt butter in a bowl in the microwave, about 45 seconds to 1 minute.  Combine coconut, bread crumbs, sugar and salt in another bowl.  Set butter aside to cool slightly.  Beat egg in a bowl and add milk and melted butter.  Combine with dry ingredients and bake in a buttered dish for 30 minutes or until set.
