Pan American Day Dishes – Uruguayan-Style Green Beans

Bonus recipe – because it sounds tasty, and I get to show off my purple beans… which turn green when cooked.

Wash the beans well and either break them into small pieces or shred them.  Boil quickly in salted water in an uncovered pan.  When the beans are tender, wash them twice in cold water.  Then put them into a frying pan with butter, salt, pepper and a tablespoon of minced parsley.  Cook over a brisk fire for about 10 minutes.  Sprinkle with lemon juice just before serving.
