Zittoni

My co-worker said the name needed to be changed for this recipe.  He said it was slightly disturbing.  I think it sounds pretty yummy.  And the name is kinda fun to say, in my opinion.

Zittoni

3 onions

3 green peppers

1 lb. hamburg

1 cup oil (no way would I use that much – a couple of tablespoons will do)

3 cans tomato soup

3 cans tomato paste

1 can mushrooms (I’d use fresh, about 8-10 small shrooms sliced)

1 can corn

1 cup water

1 lb. spaghetti (does not say cooked or uncooked – go with cooked)

1 lb. cheese (not specified which kind, I’d go with mozzarella)

No instructions are given other than to bake 1 hour in a moderate oven.  So here is what I would do:  Cook spaghetti according to package directions, strain and set aside.  Brown hamburger in pan with 2 tablespoons olive oil, and add onions and green peppers that have been chopped (add fresh mushrooms now if you are not using canned).  Cook until meat is browned and the onions are translucent.  Add water, tomato soup, tomato paste, and corn and stir to combine.  Add the drained spaghetti and put into a greased casserole.  Top with shredded moz.  Bake at 375F for an hour.  You can cover the top with foil so the cheese does not get too brown if you like.  I would probably kick this up with some chopped garlic added with the onions, and possibly some red pepper flakes for a punch.
