Uncooked Peach Jam

Hey!  Look… a recipe with peaches!  I truly am obsessed.

This is a GREAT recipe for those who are canning challenged.  It is nearly a fail safe way of making jam that your family will love, called freezer jam.  Powdered fruit pectin is available in any large grocery store.  Prepared fruit is fruit that has been washed, peeled, pitted, chopped finely and measured.

Uncooked Peach Jam

3 cups prepared fruit

5 cups sugar

1/8 tsp. grated lemon rind

1 T. lemon juice

¾ cup water

1 box powdered fruit pectin

Wash, peel and pit about two pounds fully ripened peaches.  Chop very fine.  Measure three cups into a large bowl.  Add sugar, lemon rind and juice to peaches mix well, allowing to stand 15 minutes, stirring occasionally.  Mix water and pectin in a small saucepan.  Bring to the boil and boil hard for one minute, stirring occasionally.  Add to fruit mixture then stir briskly for three minutes.  Place in glasses or freezer containers and cover at once with tight lids.  Let stand 24 hours then store in freezer.
