Orange Marmalade – 1901 CB

I adore orange marmalade.  It is so damn good.  I have never made it though.  I may get adventurous and make it at some point this fall, as everyone in my family loves it as well.  Those little bits of orange and rind are a wonderful texture break from plain old jelly or jam.

Orange Marmalade

6 Oranges

3 Lemons

2 pints of water for every pint of fruit

Take fruit and slice thin or cut into a small dice and remove all seeds.  Measure out water and cover for 24 hours.  Boil for 1 hour.  When cold, measure the fruit and add equal amount of sugar and boil 1 hour longer until it jells.
