Sea Captain’s Tomato Catsup

I wish I knew how this recipe obtained its colorful title.  It’s not just tomato catsup.  It is Sea Captain’s tomato catsup.  It sounds… romantic.  Like I expect a Fabio type god to magically appear when I am stirring this, slaving over the pot with tendrils of hair plastered to my forehead in effort.  Maybe Brad Pitt instead of Fabio.

Sea Captain’s Tomato Catsup

Capt. Jack wants a pinch of spice...

1 peck ripe tomatoes

4 tablespoons salt

4 tablespoons black pepper

1 tablespoon ground mustard

1 tablespoon ground allspice

1 tablespoon ground cloves

1 quart cider vinegar

Added to the Improved Sea Captain’s is

2 chopped sweet peppers

1 teaspoon chili powder

2 tablespoons of coriander seed (crushed with rolling pin)

No further directions.  So take your tomatoes and peel them if you do not have a food mill.  Chop roughly and add to a non-reactive pot and bring to a boil.  Add all other ingredients and bring to a boil and reduce to your favored consistency.  Run through a food mill, blender, or use an immersion blender to create a smooth catsup.  Bottle while hot.
