Grape Nut Pudding

Grape Nuts are (or is it “is”) great for breakfast.  I should probably eat actual cereal more for breakfast, but am caught in a smoothie cycle that is fun to experiment with as well.  Anyways, Grape Nuts have been around forever.  Some of the old advertisements are wonderful to read.  If you get the opportunity, buy them homemade from the Amish.  Better yet, I will provide you with the Amish recipe for Grape Nuts, of which there are several versions.

This sounds like a wonderful pudding, and would have a lot of texture which you normally don’t expect in a pudding.  And it’s not a normal pudding in the sense that you add milk.  Your creamy texture should come from the Grape Nuts when they swell from the boiling water.

Grape Nuts Pudding

1 box lemon jello

1 cup sugar

1 cup Grape Nuts cereal

½ cup walnuts

½ cup raisins

2 cups boiling water

Dissolve Jello powder in boiling water and stir to dissolve.  Add remaining ingredients and stir while hot.  Cool to room temperature and then refrigerate.
