Chutney

Chutney is a word incorporated into English from Hindi-Urdu describing a condiment used in South Asiaand other South Asian cuisines. Chutneys usually contain a crazy but complementary spice and vegetable mix.  They are basically a relish but generally much more bold and flavorful.  There are dozens of types of chutneys out there.  Some of them can quite frankly look like baby poop, but don’t let that influence you.  They are great with pork and chicken dishes.  This picture is just random chutney picture – this recipe will be more green.

Chutney Sauce

12 sour apples, chopped

2 green peppers, seeds removed and chopped

6 green tomatoes, chopped

4 small onions, chopped

1 cup seedless raisins

1 quart vinegar

2 teaspoons mustard

2 teaspoons salt

1 teaspoon cloves

2 ½ cups brown sugar

Put vinegar, sugar and spices in kettle and add chopped vegetables and simmer 1 hour.  Can.  Makes about 3 quarts.
