Cornmeal Mush

Have to admit, when someone mentions mush, I’m thinking of the infamous scene from Oliver, where he is pleading for more gruel.  As unappetizing as the title of this recipe is, I think it would be delicious.  If it was titled more like, “Polenta with Sausage” it would sound so much more tasty.

Cornmeal Mush

1 lb. sausage

3 cups water

1 cup cornmeal

2 tsp. salt

1/4 tsp. pepper

Brown sausage in a large skillet; pour off fat.  Add 2 cups of water; heat to boiling.  Combine cornmeal, salt, pepper, and remaining water.  Add to boiling liquid, stirring constantly. Place on low heat and simmer for 10 minutes, stirring frequently. Pour into a greased loaf pan and chill.  Cut into 1/2 inch slices and fry slowly in hot fat until browned.

Serve with maple syrup for an amazing breakfast.
