It’s fairly well known that the Hartfield Fire Department has some of the best chicken barbecue in Chautauqua County. Many years ago, my grandmother Naomi passed along the recipe for their wonderful and impossibly easy sauce. It is best with chicken, but also works great on grilled vegetables.
Hartfield Fire Dept. Chicken Barbecue Sauce
1/4 cup Mazolla oil
1/4 cup cider vinegar
1 Tablespoon salt
1/8 tsp. black pepper
1/4 tsp. poultry seasoning
Beat the egg and oil until combined. Add the remaining ingredients and baste chicken with sauce often while grilling.
You can change the recipe and play with it a bit by adjusting seasonings, oils and vinegar. I’ve used olive oil and balsamic, added some cayenne, lots of rosemary, garlic – basically anything that you can imagine. But try the original first. You won’t be disappointed!
