Filled Apple Butter Cookies

Apple butter will be coming into full season soon.  Not that it is ever out of season for me.  I love the stuff.  Here is a great vintage recipe that incorporates the sweet stuff in a filling between two cookies.

Filled Apple Butter Cookies

1/2 cup butter

1 cup sugar

1 egg

1 1/2 tsp vanilla or 1 tsp vanilla and 1/4 tsp. almond extract

3 3/4 cups pastry flour or 3 1/3 cups all-purpose flour (sifted once before measuring)

1/2 tsp. salt

4 tsp. baking powder

1/3 cup milk

Cream butter, add sugar gradually, and cream well.  Add beaten egg and flavoring.  Sift flour, salt and baking powder together and add to butter mixture alternately with milk.  Roll to 1/8 inch in thickness and cut with a medium sized cookie cutter.  Place a teaspoon of either filling listed below in the center, cover with another cookie and press together with a fork or finger tips.  Bake in a hot oven (400F.) for 12-15 minutes.  Cookie dough rolls much easier if chilled about 30 minutes before rolling.

Filling No. 1

1/2 cup apple butter

1/2 cup nut meats

1/2 cup raisins

Filling No. 2

1/2 cup apple butter

1/2 cup dried coconut
