Jelly Jumbles

Old recipes have such great names, and what a wonderful name for a cookie this is.  This sounds like a jelly filled cookie, and while it calls for currant jelly, use whatever jelly you like the most.  Use can use jam, marmalade or any type of fruit butter.

Jelly Jumbles

Why is she upside down?

1/2 cup butter

1 cup sugar

2 egg whites

1 tsp. vanilla

Red vegetable coloring

3 to 4 Tbsp. cream

2 1/2 cups sifted all-purpose flour

2 tsp. baking powder

Currant Jelly (or your favorite)

Cream butter thoroughly, add sugar gradually, and cream until fluffy.  Add egg whites, unbeaten, and continue creaming.  Add vanilla and a small amount of red vegetable coloring to make the dough pink.  Add cream, then flour sifted with baking powder, to make a dough that will roll.  Roll to about 1/8 inch in thickness.  Shape, using any desired cookie cutter. In the center of each cookie place a spoonful of jelly.  In another cookie of the same shape, cut two or more small circles, using a thimble.  Place the cut cookie over the one with the jelly and press the edges firmly together.  Sprinkle with granulated sugar and bake in a moderate oven (375F.) for 12-15 minutes.
