Mince Meat Fudge Squares

Well, this is certainly an interesting use of the dreaded mince meat.  I imagine these would be very rich, dense and moist.  The spices in the mince meat will add a wonderful depth, and there is nothing better than spice and chocolate.

Mincemeat Fudge Squares

1/2 cup butter

1 cup sugar

2 eggs

1/2 cup mincemeat

1/2 cup nuts (walnuts, almonds)

1 tsp. vanilla

1 1/2 oz. chocolate melted over hot water

3/4 cup sifted pastry flour

1/4 tsp. salt

Cream butter, add sugar gradually, and cream together thoroughly.  Add eggs, one at a time, beating after each addition.  Add mince meat, nuts, vanilla and melted chocolate.  Fold in flour and salt, which have been sifted together.  Pour into a shallow pan, 8″ by 12″, which has been greased and lined with waxed paper, and bake in a moderate oven (350F.) for 30 to 35 minutes.  Turn out on waxed paper and cut while hot into small squares like fudge.  Sprinkle with powdered sugar.
