Mince Meat Cup Cakes

I  like cup cakes.  Easy, portion controlled, and you can do anything with them.  I have decided while looking for an interesting photo to post with this, that I simply must have this cupcake pan.  But simply not at that price.  But it’s fabulous.

Mince Meat Cup Cakes

1/3 cup butter

3/4 cup sugar

2 eggs

1 cup mince meat

1 tsp. vanilla

2 cups sifted pastry flour

1 tsp. baking powder

1/4 tsp. soda

1/4 tsp. salt

1/4 cup sour milk

Cream butter, add sugar gradually, and cream together thoroughly. Add eggs, one at a time, beating until fluffy after each addition.  Add mince meat and vanilla.  Sift flour, baking powder, soda and salt together, and add alternately with the milk.  Bake in greased cup cake pans or paper cups in a moderately hot oven (400F.) for 20 minutes.  If you wish to bake it in a loaf pan instead, bake at 375F. for 50 minutes.  Makes 14 cup cakes or one loaf.
