Cheese Waffles with Grilled Tomatoes


The picture that accompanied this recipe was just too cute.  This is from an old calendar.  Lots of goodies from this so I’ll be posting some of them.  I love waffles, I’m just not sure I want them served with cheese and tomatoes, or fried chicken for that matter.  I could be terribly wrong.  That would be something new.

Cheese Waffles with Grilled Tomatoes

Sift once:  2 cups cake flour

Add:  2 teaspoons double-acting baking powder

1/2 teaspoon salt

Sift again with flour

Combine: 3 egg yolks, well beaten

1 cup milk

4 tablespoons melted butter

Add to flour mixture, beating until smooth

Add: 1 cup grated cheese

Beat stiffly: 3 egg whites

Stir quickly but thoroughly into batter; bake in hot waffle-iron.  Serve with grilled tomatoes.  Makes 5, four section waffles.  Diced uncooked bacon may be sprinkled over the batter before closing the iron.  This batter may also be baked on a hot greased griddle.
