Haurekakor (Havrekakor)

This cookie is a thin, crispy oatmeal cookie from Sweden.  The special note at the end of the recipe says that the batter is like no other.  It may look funny, but that is the way it is supposed to be!

Havrekakor

½ cup butter

¾ cup sugar

1 cup oatmeal

2 tbsp. sifted flour

1 tsp. baking powder

1 egg

Melt butter and remove from heat. Stir in rest of ingredients. Drop by small spoonfuls on very well greased and floured cookie sheet, 3” apart. Bake at 375 degrees for six to eight minutes. Cool on sheet for a few minutes, until set. Makes about three dozen cookies.

NOTE: These are very thin, crunchy cookies. The batter looks like no other cookie batter you have ever seen, but it is supposed to look like that, and the result is delicious.
