Spanakorizo

I happen to be a big fan of Greek food.  I love gyros.  I just don’t think about what they are made with.  Spanakopita is my favorite thing in the world.  This recipe is for rice and spinach, which would go good with any type of meat.  I think it would be very good with chicken.  Some recipes call for tomato sauce and some do not.

 

Spanakorizo (Greek Spinach) 

 1 lb. Fresh spinach, washed

2 onions, chopped finely

1 cup rice (not the minute variety)

1/3 cup olive oil

Juice of one lemon

1 cup water

4 tbsp. tomato sauce

Saute the onions in the oil in a saucepan until softened. Add rest of ingredients except for the lemon juice.  Cover and simmer for 15 minutes. Add the lemon juice. Re-cover and simmer for five more minutes, stirring occasionally. Serves 4.

This is a very good dish with any plain roasted meat.
