Ris Alamante (Risalamande)

The traditional Danish Christmas dinner includes roast duck or goose stuffed with apples and prunes and Ris Alamante for dessert. Whoever finds the one whole almond in the dessert, according to old Danish legend, will have a series of lucky adventures.  This rich rice pudding, served with raspberries or cherries, will be a welcome addition to your family’s table.

Ris Alamante (Risalamande)

¾ cup of long grain rice

5 cups milk

Pinch of salt

Vanilla

½ pt. whipping cream, whipped

1 tbsp. sugar, more if desired

Chopped almonds, plus one whole almond

Frozen strawberries or raspberries

Place rice and milk in a pan with a pinch of salt. Bring to a boil, lower the heat and simmer for 45 minutes to one hour. Cool in the refrigerator. Remove from refrigerator when cool and loosen rice with a fork until it is fluffy. Add sugar and vanilla. Fold in whipped cream until mixture is light and fluffy. Stir in chopped almonds and the one whole almond. Serve with strawberries or raspberries. Serves four.
