Almond Turkey Casserole

When everyone has settled down from the food marathon that is Thanksgiving, my thoughts turn towards how many days worth of turkey is left over.  A staple in my house with day old turkey is my turkey pot pies.  I usually make the filling and put them in single ramekins and then just put a top crust on them.  This sounds like a delicious leftover dish for the day after… or after that day even.





Almond Turkey Casserole

2 cups diced turkey or chicken

2 cups toasted bread crumbs

1 ½ cups grated sharp cheese

¼ cup sliced almonds

2 tsp. minced onions

½ cup cream of chicken soup

½ tsp. grated lemon rind

1 tsp. lemon juice

Salt and pepper to taste.

Mix all the ingredients in a casserole, reserving half the bread crumbs to spread on top. Bake at 350 degrees for 25 minutes. Serves 4.

This can be made ahead of time and refrigerated until baking.
