Turkey is the natural go to on Thanksgiving. But what if you don’t like turkey? Go with chicken. I honestly do not know anyone who does not like chicken. It is one of the most versatile of the proteins, and there must be a million and a half ways to cook it. Here is a recipe that was written on a piece of paper stuck in a book.
Holiday Chicken for a Crowd
24 pieces of chicken
¾ lb. fresh mushrooms, slices
2 can cream of chicken soup
1 can cream of mushroom soup
¼ cup dry white wine
Brown the chicken in butter. Brown the mushrooms. Put chicken into deep casserole. Mix the three cans of soup thoroughly and do not dilute. Pour over chicken. Put browned mushrooms on top. If you can, refrigerate overnight to enhance the flavor. Before baking, add ¼ cup white wine. Bake one and a half hours in 350 degree oven. Serves 12.
