Apple Scallop

A twist on the classic potato scallop, this apple scallop is just as versatile.  Cheese can be added for those that like cheese with their apples like in pie.  Different spice combinations can make this more like mom’s apple pie, or as different as you  like.  A delicious alternative to the same old apple pie this year.

Apple Scallop

3 cups sliced apples

1 egg

1 cup sugar

¼ tsp. salt

Beat egg until light. Add sliced apples, sugar and salt. Turn into battered baking dish (8 x 8 x 2 dish) and top with the following:

¾ cup flour

¼ cup butter

½ tsp. cinnamon

½ cup brown sugar

Work flour, butter, brown sugar and cinnamon together with pastry blender. Sprinkle over pudding and bake in moderate oven (350 degrees) for 45 minutes. Serve hot or cold with whipped cream.
