The holiday cookie parade marches on!
1 ¾ cups whole wheat pastry flour
1 ½ cups quick-cooking oats
½ tsp. baking soda
½ tsp. ground cinnamon
¼ tsp. salt
¼ tsp. ground nutmeg
¾ cup butter or margarine, at room temperature
1 cup packed light brown sugar
1 large egg
1 cup applesauce
½ cup raisins
½ cup chopped walnuts or other nuts
Heat oven to 350º. Have greased cookie sheet ready. Mix flour, oats, baking soda, cinnamon, salt and nutmeg. In a large bowl beat butter and sugar with electric mixer on medium speed until fluffy. Beat in egg until well blended. With mixer on low speed add flour mixture alternately with applesauce; beat just until blended. Stir in raisins and nuts. Drop by heaping tablespoonfuls 3 inches apart onto prepared cookie sheet. Bake 12 to 15 minutes until golden brown. Cool completely. Makes 24 soft 3-inch cookies.
