Brown Sugar Cookies

Brown sugar comes in several forms.  There are the ever popular light and dark sugar that you buy at the store and is the staple in baking nowadays.  Muscovado is a lesser refined cane sugar, typically found in Britain but sometimes found in the US labelled as Barbados or moist sugar.

These cookies are basically a chocolate chip cookie…without the chocolate chips!

Brown Sugar Cookies

3 cups brown sugar

1 cup lard

3 eggs

1 cup sour cream

1 tsp. soda

2 tsp. baking powder

Pinch of salt

Vanilla

Cream the sugar and lard. Add the eggs and then the cream and the dry ingredients, alternately. Use just enough flour so you can handle, being careful not to get the dough too stiff.
