An Unnamed Casserole



The fun thing about old recipes is sometimes the names are the funniest. Or they tell you nothing. This one is simply titled “Casserole”. Not the most enlightening name for this particular casserole, but it has a bit of Chinese vibe to it with the noodles, and it will certainly be hearty, creamy, and definitely fattening. What more would one need in comfort food?

1 small can evaporated milk
1 can tuna fish, drained
1 can chicken and rice soup
1 can mushroom soup
1 can Chinese noodles

Combine all ingredients and place in a greased casserole dish (I am guessing a 1 1/2 to 2 qt. casserole – it doesn’t give a size). Bake for about 40 minutes. Remove from onion and sprinkle one can of french fried onions on the top. Return to the oven for 5 minutes.
