Ham-N-Cheese Quiche

Quiche is a fairly easy, and wonderfully versatile item. There are so many options as to what to add to it that you could have a different kind almost every day of the year. This quiche is a hearty meal on it’s own, guaranteed to satisfy the pickiest of eaters with cheesy hammy goodness.

1 1/2 cups cubed cooked ham
6 ounces shredded cheddar or Swiss
1/4 cup copped onion
3 tablespoons chopped green pepper
1 cup pancake mix
1/4 teaspoon salt
1/3 teaspoon pepper
2 cups milk
5 eggs

Topping:

1/2 cup crushed corn flakes
1/4 cup melted butter

Heat oven to 350F. Grease a 12X8″ dish or a 2 quart casserole. Place ham, cheese, onion and green peppers in bottom of prepared pan. Lightly spoon pancake mix into measuring cup. In medium bowl combine pancake mix, salt, pepper, milk and eggs. Blend for 3 minutes on medium speed. Pour over ham mixture. Sprinkle corn flakes over eggs and drizzle butter on top. bake 50 to 60 minutes or until brown.
